Chibi the Ginger Cat's Spicey Jams

Raspberry Vanilla Jam
1 c. fresh raspberries (use a few that are not ripe for pectin)
1/4 c. sugar
1/4 c. vanilla sugar
Boil until thickened and put in a sterilized jar

Rhubarb Ginger Jam
Mix:
1 c. rhubarb, diced
½ c. sugar
juice of ½ lemon
1½ T. candied ginger, cut in very small pieces
Let stand 20 minutes. Boil until thick (about 15 min)  Mash with potato masher while boiling. Pour into sterilized jar.



Pineapple Lime Jam
1 c. fresh pineapple cut in small pieces
juice of 1 lime
½ c. sugar
1/4 c. water
Boil until cooked, about 15 min, and mash with potato masher. When thick pour into sterilized jar.

Slow's Quick Soup

Boil 2 quarts water and add chicken bouillion.
Make Slow's meatballs:
Mix:
1 t. salt
1 t. pabrika
1 t. garlic powder
1 t. curry
1 small onion finely grated
1 egg
1 lb. lean ground chicken
Shape as meatballs and push two whole wheat penne pasta into each. Tip: use vinyl food gloves while shaping meat.
Drop the meatballs into the boiling soup and boil 10 minutes.

Add:
1 stalk celery, finely diced
1 red pepper, finely diced
4 oz sugar peas, cut in strips
1½ c. canned corn
Boil 5 min more and serve.

Slow says "This is an original, good soup and the meatballs look like me!" ****

Eeyore's Happy Macaroni Dinner

Boil:
6 oz. macaroni
Fry:
12 oz. lamb or beef, finely diced
Add: 2 stalks of celery, diced
7 oz. sliced mushrooms
1½ c. canned corn
Add:
1 lb. jar of chili tomato sauce
2 T. water
Add the macaroni and serve.

Squirrely's Crispy Muffins

Mix:
2 eggs
½ c. olive oil
3/4 c. buttermilk
Add:
2 c. finely grated mixed nuts
2 t. cinamon
1 T. unsweetened cocoa powder
1 t. baking soda
1/4 c. sugar
3/4 c. whole wheat flour
Spoon into greased muffin tin. Make face with blueberry eyes and raisin nose. Bake for about 20 min. at 350 F or 200 C.
