Galapagos Tortoise's Soup

Mix:
14oz. chopped lean beef
1 egg
1 t. salt
½ t. ginger
1 t. chili powder
1½ t. turmeric
Boil 1½ quarts of water and add chicken bouillon
Sauté lightly:
1 red onion, finely diced
2 cloves garlic, finely grated
1 carrots, cut in quarter circle slices
1 c. sugar snap peas, cut in slices
Add to chicken broth
Then add:
1 orange pepper fruit, diced
2 leaves chinese cabbage, diced
Form meat mixture into tiny meatballs and drop in soup. (use food gloves if you want) Skim off fat from meat.
Add 9 oz. fresh egg noodles cut into short pieces
Boil all together for about 5 minutes and sprinkle with shrimp and serve.

Grandpa Piggy's Red Hot Dish

Boil 5 ½ ounces chinese noodles and drain.
Spice with:
1 T. olive oil
1 t. chili
1 t. paprika
Mix:
14 ounces low fat ground chicken
1 egg
1½ t. turmeric
1½ t. chili
Fry in olive oil and chop meat while frying so it is crumbly.
Sauté:
1 red onion, diced
3 cloves garlic, finely grated
1 red pepper, diced
1 c. canned corn
Add fried chicken and noodles.
Sprinkle with 1 c. almonds, sliced and toasted

Nosey Leopard's Pumpkiny Triangle Cookies

Mix.
1 c. cooked and mashed pumpkin or hokaido squash
½ c. oil
1 egg
1 t. almond essence
½ t. ginger powder
½ c. poppy seeds
½ c. raw sugar
1 c. finely ground walnuts
1 t. baking powder
2 1/4 c. spelt flour
1 c. dried cranberries

Shape the cookies as triangles. Bake on greased baking sheet at 350 F or 180 C for about 20 min or less depending on the size and thickness of the cookies. We made 8 large thick cookies.
