Wild Bear's Carrot Cranberry Bars

Mix:
2 eggs
½ c oil
1½ c finely grated carrots
seeds from 1 vanilla bean
1 t ginger
½ c raw sugar
1 T coconut flakes
½ c raw oatmeal
1 t baking powder
1½ c whole wheat flour
1 c dried cranberries

Bake in greased 9" round pan at 350 F or 180 C for 20 -25 min.
Cut in rectangles.

Sonne Cat's Almond Spicy Waffles

Mix:
2 eggs
1 c buttermilk
2 T oil
1 c almonds, finely ground
1 t vanilla sugar
½ t ginger powder
1/8 t salt
1 t baking soda
½ c spelt flour

Bake in waffle iron

Lady Bug's Spicy Cheese Crackers # 2

Mix well:
½ c chia seeds
1/4 c sesame seeds
½ t turmeric powder
3/4 t chili powder
1½ t garlic salt
1 c grated sharp cheddar
1½ c spelt flour

Add:
1/3 c olive oil
1/3 c cold water

Roll thin and cut in shapes. Bake about 12 min (depends on thickness and size) at 200 C or 390 F

Lady Bug's Spicy Cheese Crackers #1

Mix well:
½ c pumpkin seeds
1 t curry powder
1 t pabrika
½ t chili
1 t salt
1/3 c parmesan cheese
½ c grated cheddar cheese
1½ c spelt flour

Add:
1/3 c olive oil
1/3 c cold water

Roll dough thin and cut out in circles or squares or any shape.
Bake about 15 min at 200 C or 390F

Jolly's Rhubarb Applesauce Cake

Mix:

3 eggs
½ c oil
1 c sweetened applesauce
½ c buttermilk
1/3 c raw sugar
1½ t ground cinnamon
1 c finely ground walnuts
½ t baking powder
½ t baking soda
1 1/3 c whole grain spelt flour
1 c rhubarb diced
½ c dried cranberries
Bake in greased form for ca 40 min at 350 F or 190 C

Mond Cat's Hazelnut Orange Waffles

Mix:
2 large eggs
1 c. freshly squeezed orange juice
2½ T oil
1 c. finely ground hazelnuts
1 c. spelt flour
1 t. baking soda
1 t. sugar
a little salt
Bake in a waffle iron and enjoy!

Perky Pear's Pear Cookies


Mix:
2 eggs
½ c oil
½ c brown sugar
3 t cinnamon
2 t ginger powder
1 medium sized pear, peeled and finely diced
2 c spelt flour
1 t baking powder
½ c raisins
1/4 pumpkin seeds

Shape as pears and bake on greased baking sheet for about 15 min (after thickness) at 350 F or 190 C

Letter to Fat Cat about Curry Soup from Twilight Sue the Cat

Dear Fat Cat,

I wanted to tell you about this delicious soup I made without bouillon. You know there's lots of msg in bouillon and I can't tolerate it.
Anyways you sauté spring onions, carrots, yellow pepper and canned corn with curry powder and turmeric. Add water and garlic salt and diced raw turkey and cook. Add some Chinese noodles of your choice and cook until they are ready and serve this fantastic, delicious soup.

The Frogs Breadsticks

Mix:
2 c lukewarm water
1½ t yeast
whole grain spelt flour to make a porridge consistency. Cover and let sit 1 hour.
Add:
2½ T olive oil
2½ t salt
1/3 c finely grated parmesan cheese
100 g or 3½ oz grated mature cheddar
Enough spelt flour to make a somewhat sticky dough.
Roll long pieces in lots of poppy seeds and twist and place on greased baking sheet. Bake at 200 C or 375 F for about 30 minutes.

Fat Cat and Danglisar's Spicey, Salty, Sweet Dinner

Mix:
1 ½ t garlic salt
1 t chili
1 t turmeric
1 egg
1 lb lean ground chicken
Fry as small meat balls
Sauté in olive oil:
1 onion, diced
3 cloves garlic, finely grated
2 carrots, diced
1 t chili powder
1 t curry powder
1 red pepped, diced
3.5 oz (100g) fresh bean sprouts
3.5 oz (100g) fresh mushrooms, sliced
7 rings canned pineapple, cut in pieces
Cook 7 oz thin rice noodles

Add meatballs to vegetables. Add 5 T soy sauce. Stir in rice noodles and serve.
