Gobbles' Thanksgiving Apple Surprise Pie

Pie Crust:
Mix
1 egg
½ c. oil
½ c. raw sugar
1½ t. baking powder
1 3/4 c. spelt flour
Divide in two uneven balls. Roll out biggest ball between two pieces floured baking paper.
Put in pie dish.
Add filling:
5 c. tart apples, peeled and diced
1 c. raspberries fresh or frozen
1 c. dried cranberries
3 T. raw sugar
2 T. spelt flour
Roll out top and cover. Cut slits with a knife
bake at 350 F or 180 C for about 40 minutes.

Letter to Fat Cat from Pelican


Dear Fat Cat, Here's a photo of my Pelican Muffins-they are delicious! I used bananas that I mashed in a little blender and that worked great and ground walnuts and poppy seeds. The faces are strawberries as beaks and hazelnut eyes. Best regards, Pelican

Hawaian Tortillas

Boil 3/4 c. water
½ t. salt
1 t. turmeric
1 t. curry
Add ½ c. basmati rice and simmer 15 min.
Fry: 10 chicken nuggets and cut in small pieces
Sauté:
1 large carrot, diced
3 garlic, finely grated
Add:
1 c. frozen peas
6 pineapple rings, diced
½ c. sesame seeds
Add rice and chicken nuggets
Heat tortillas, add filling and fold and eat and enjoy!

Homer's Vanilla Mint Applesauce

Peel and dice 8 tart apples (Homer used Belle de Boskop)
Put in a saucepan
Add: water to cover half way up
5 mint leaves chopped
2 vanilla beans cut open and scrape out seeds
Simmer with lid on, until the apples are soft and can be mashed.
Add ½ c. sugar and cook a little more.
Add more sugar to taste if wanted depending on the tartness of the apples.
