Snowman Buttons' letter to Skvat Cat- Strawberry Lime Jam- YUM!

Dear Skvat Cat,

Happy Holidays to you and the staff!

If you need some jam this holiday, I can recommend this really yummy strawberry, lime jam with orange peel that I just made. I used frozen strawberries, lime juice, grated organic orange peel and sugar and cooked until it jelled. It is fantastically delicious and different than any jam you have tried.

Little Pig's Xmas Crunchy Cookie

Mix:
1 egg
½ c. oil
½ c. raw sugar
1 t. vanilla essence
1 T. unsweetened cocoa
grated organic lime peel
4 t. ginger powder
½ c. finely ground hazelnuts
ca. 1 1/4 c. spelt flour
1 t. baking powder

Roll and cut with a cookie cutter. Bake about 10 min (depending on thickness and size) at 350 F or 180 C
Icing:
Mix 4-5 frozen strawberries, thawed and blended with
confectioners sugar and ice cookies that have cooled for 10 min.

Big Pig's variation:
Use lemon peel, instead of lime peel.
Use ground walnuts, instead of hazelnuts.
Use carob, instead of cocoa.
Omit vanilla essence.

Gobbles' Thanksgiving Apple Surprise Pie

Pie Crust:
Mix
1 egg
½ c. oil
½ c. raw sugar
1½ t. baking powder
1 3/4 c. spelt flour
Divide in two uneven balls. Roll out biggest ball between two pieces floured baking paper.
Put in pie dish.
Add filling:
5 c. tart apples, peeled and diced
1 c. raspberries fresh or frozen
1 c. dried cranberries
3 T. raw sugar
2 T. spelt flour
Roll out top and cover. Cut slits with a knife
bake at 350 F or 180 C for about 40 minutes.

Letter to Fat Cat from Pelican


Dear Fat Cat, Here's a photo of my Pelican Muffins-they are delicious! I used bananas that I mashed in a little blender and that worked great and ground walnuts and poppy seeds. The faces are strawberries as beaks and hazelnut eyes. Best regards, Pelican

Hawaian Tortillas

Boil 3/4 c. water
½ t. salt
1 t. turmeric
1 t. curry
Add ½ c. basmati rice and simmer 15 min.
Fry: 10 chicken nuggets and cut in small pieces
Sauté:
1 large carrot, diced
3 garlic, finely grated
Add:
1 c. frozen peas
6 pineapple rings, diced
½ c. sesame seeds
Add rice and chicken nuggets
Heat tortillas, add filling and fold and eat and enjoy!

Homer's Vanilla Mint Applesauce

Peel and dice 8 tart apples (Homer used Belle de Boskop)
Put in a saucepan
Add: water to cover half way up
5 mint leaves chopped
2 vanilla beans cut open and scrape out seeds
Simmer with lid on, until the apples are soft and can be mashed.
Add ½ c. sugar and cook a little more.
Add more sugar to taste if wanted depending on the tartness of the apples.

Homer says: Goes great with a barbecue! *****

Frederick the Fox's Dessert Bread

Mix sponge:
1 c. lukewarm milk
1 c. water
1 T. yeast
enough spelt flour to make a porridge consistency.
Cover and let rise at least one hour.
Add:
4 T. olive oil
1 t. salt
2 T. cinnamon
2 eggs
½ c. sugar plus 2 T. sugar
1 c. frozen blackberries, thawed
1 c. pear, peeled and diced and mixed with 1 t. ginger and 1 t. sugar
Add enough spelt flour to make a dough. Shape as Frederick the Fox or an animal of your choice.
Bake at 350 F or 180 C for about 30 - 35 min depending on the thickness of your animal.

Perky Pear's Muffin

Mix:
1 egg
1/4 c. oil
1 c. buttermilk
Add:
1/4 c. raw sugar
3/4 c. almond flour (finely ground almonds)
1 c. spelt flour
1 t. baking soda
3/4 c. raisins
1 c. finely diced fresh pear,  mixed with 1 t. ginger and 1 t. cinamon and 1 t. sugar
Make walnut faces on top

Bake in greased muffin tin at 350 F or 180 C for about 25 min.

Mallard Duck's Pistachio, Lemon, Chocolate Cake

Mix:
2 eggs
1 c. lemon juice
½ c. oil
2/3 c. finely ground pistachio nuts
½ c. sugar
1/4 c. unsweetened cocoa
grated peel from 1 lemon
2 c. spelt flour
1 t. baking soda

Bake about 30 min in greased pan at 350 F or 180 C.
Draw Mallard Duck or another animal on top with white icing.

Catball & Yes Bear's Sweet & Spicey Round Empanadas



Start dough:
2 c pineapple juice
1 t yeast
enough spelt flour to make a porridge consistency.
Cover and let stand.
Bake turkey:
400 g. turkey breast cut in slices marinated with
3 T olive oil, 2 t curry, 2 t pabrika
Bake at 350 F or 180 C for 20 min or until done.
Cut in cubes.
Boil:
1 c water
Add:
2/3 c basmati rice
1 t salt
1½ t chili powder
1½ t pabrika
Simmer 12 min or until done.
Dice and sauté:
1 leek
5 garlic cloves
2 stalks celery
150 g. bean sprouts
1 orange pepper
2 t curcumin
1 t chili powder
Add cubed turkey and cooked spicey rice to vegetables and mix well.
Finish dough by adding:
1 t salt
4 T oil
enough flour to make a good consistency.
Knead and form into balls. roll out each ball to a flat circle and place filling in the middle. Pull all sides up to center and pinch to form a ball. Baste with beaten egg and bake for about 30 min at 350 F or 180 C.

Catball & Yes Bear say: These take two hours from start to finish but they are so tasty that they are definitely worth the time! Try them! Yes! *****

Beagle's Fresh Cherry Muffins

Mix:
1 egg
1 1/4 c. buttermilk
4 T. oil
1 c. pitted and quartered cherries
1 c. ground almonds
1/4 c. sugar
1½ c. spelt flour
1 t. baking soda
Pour into greased muffin tin. Cut up pineapple slices for faces. Bake 20- 25 min at 350 F or 180 C.

Recipe 100! 20 minute Surprisingly Yummy Dinner by Hat Pig, the Grinch and Frederick the Fox

Boil 250 g chinese noodles
Fry 11 chicken nuggets and cut in bite size pieces
Sauté:
1 chopped leek
3 cloves of garlic, finely grated
1½ red peppers, chopped
1 red chili, finely chopped
1½ c. frozen peas
Add juice from one lime
100 g. roasted cashews
Mix in chicken nugget pieces and noodles and serve.

Hat Pig, the Grinch and Frederick the Fox say: This dish is surprisingly good so the three of us ate it all up, but otherwise it might be enough for 4! Yummy! *****

Garfield's Summer Jam

Black Currant Cinamon Jam
1½ c. black currants
½ c. sugar
2 T. pineapple juice
1 heaping teaspoon cinamon
Bring to a boil, simmer until thick. Put in sterilized jar.

Raspberry Lemon Jam
1½ c. raspberries
½ c. sugar
lemon zest from ½ lemon
juice from ½ lemon
Bring to a boil, simmer until thick. Put in sterilized jar.

Love Cat's Tasty Almond Flour Cake

Mix:
2 eggs
½ c. oil
½ c. frozen blackberries, thawed and blended
½ c. lemon juice
Add:
½ c. raw sugar
1½ c. almond flour (or finely ground almonds)
1 c. walnuts, finely ground
1 t. baking soda
½ c. raisins
Bake at 350 F or 180 C in greased pan for about 35 - 45 minutes until done.
Draw Love Cat or another animal with white icing.

Pigs' New Dinner Dish

Bake 8 large chicken nuggets and cut in smaller pieces
Boil 250 g. chinese rice noodles
Sauté:

1 red chili pepper and 1 green chili pepper, finely diced (food processor)
3 carrots, sliced
2 stalks celery, diced
100 g. mushrooms, sliced
1½ c. frozen peas
50 g. almonds, sliced
Add juice from 1½ lime
Add chicken and noodles and stir well and serve

The pigs say: This is so delicious we ate it all up in one dinner. ***** (We even started to eat before the photo -that's why the pot is half empty!)

Olaf's Tasty Coffee Bread

Mix sponge:
1 c. plain lowfat yoghurt
1 c. warm water
1 T. yeast
enough whole wheat flour to make a porridge consistency. Cover and let stand minimum 1 hour.
Then add:
2 T. olive oil
2 finely grated carrots
juice from 1 large lime
1/4 c. vanilla sugar
1/4 c. raw sugar
2 t. powdered ginger
½ c. finely ground walnuts
whole wheat and spelt flour so dough can be kneaded.
Shape like Olaf or another teddy friend. Let rise ½ hour
Bake about 25- 30 min. at 350F or 200C.
Glaze with a thin mixture of confectioners sugar and boiling water. (Note: he is unglazed in the photo)

Sulley's Blackberry Peach Pie

Mix:
½ c. oil
1 egg
½ c. raw sugar
Add:
1 t. baking powder
2 t. cinamon
1½ c. whole wheat flour
roll out between baking paper and line a small pie plate.
Fill with 2 c. blackberries, 1T flour and top with 7 peach halves.
Bake 25-30 minutes at 350 F or 200 C

Tjua's Tasty Oatmeal, White Chip, Blueberry Cookies

Mix:
2 eggs
½ c. oil
½ c. raw sugar
Add:
2/3 c. oatmeal
2/3 c. whole wheat flour
½ c. finely ground walnuts
1 t. baking powder
Add:
1 c. fresh blueberries
1½ oz white chocolate cut as chips
Shape as 8 large cat heads and bake about 15 min at 350 F or 200 C

Waternoose and Fat Cat's Blueberry Raspberry Banana Crust Pie

Banana Crust
Mix:
1 banana, mashed
1 egg
2/3 c. oil
1 t. vanilla sugar
½ c. raw sugar
1 t. baking powder
ca. 3 c. whole wheat flour
Roll out a little over half the crust between baking paper and transfer to pie pan.
Add 2 c. blueberries and 2 c. raspberries
Roll out upper crust and cover.
Bake at 350 F or 200 C for 25-30 min

Reddy's Roasted Cauliflower (+ a Fat Cat variation)

Reddy says, "I  never liked cauliflower until I had it roasted. Toss it with a little olive oil, salt, pepper,and minced garlic.  Then roast in hot oven (425) for about 25 minutes, squeeze a little fresh lemon juice and enjoy!"
 
Fat Cat says: Thanks Reddy! This is a great recipe. 
Here's my variation: Add 1 t. turmeric and 1 t. curry to the olive oil, salt and pepper. I used 1 t. powdered garlic instead of fresh. I also peeled some carrots and cut them in wedges and added those to the marinade as well. Be sure to use lots of olive oil- maybe a little extra while baking. I used lime juice instead of lemon juice. This was totally delicious.
