Perky Pear's Muffin

Mix:
1 egg
1/4 c. oil
1 c. buttermilk
Add:
1/4 c. raw sugar
3/4 c. almond flour (finely ground almonds)
1 c. spelt flour
1 t. baking soda
3/4 c. raisins
1 c. finely diced fresh pear,  mixed with 1 t. ginger and 1 t. cinamon and 1 t. sugar
Make walnut faces on top

Bake in greased muffin tin at 350 F or 180 C for about 25 min.

  1. My neighbor gave me some pears so I made these yesterday and they were yummy. I don't like cleaning out muffin tins so I baked mine as big cookies.
