Skvat Cat and Fat Cat's Leftover Turkey Spicey Dish

Boil ½ lb. rice noodles with 1 t. salt
Sauté:
1 diced onion
4 cloves garlic, finely grated
2 large carrots, diced
3-4 stalks of celery, diced
a portion of sugar snap peas, sliced
1 red pepper, diced
1/4 lb.  sliced  mushrooms
Add:
2 t. pabrika
1½ t. chili
                                                                      ½ lb leftover turkey, diced
Then add noodles and mix well and sprinkle with toasted chopped walnuts and serve.

Cheshire Cat Bread

Mix:
4 c. lukewarm water
2 T. dry yeast
2 c. oatmeal
3 c. whole wheat flour
cover and let rise from 2-10 hours
Add:
1 c. frozen strawberries that are thawed and blended with 1½ t. sugar
5 T. olive oil
2 T. salt
whole wheat and spelt flour to make a dough.
Knead and shape like the Cheshire Cat. Use poppy seeds to outline mouth and stripes. Cover with a clean dish towel and let rise ½ hour. Bake about  40 minutes at 350 F or 200 C

Fat Cat trys Catnips Cookbook's Perfect Turkey

The Perfect Turkey

The turkey starts with the stuffing. I buy a loaf of bread that is a little denser than french bread, but not full of whole grains and cut off the crust and cube it and dry it in in the oven. Then I take a big slab of butter and melt that in a large iron pot. I add bay leaves (2 small ones from my potted trees), timian and sage. The smell of these herbs is heavenly and for me the essence of a good turkey. Then I sauté diced onion (about a cup), diced celery and at the end sliced fresh mushrooms. I add the dried bread cubes and mix. This I stuff in both cavities of the turkey. The small cavity usually has loose skin around it which keeps the stuffing in place, but I use a slice of bread to keep the stuffing in place in the big cavity. This is a tip I learned from my mother.
The beauty of turkey is the lack of fat, but this can be a problem roasting it. I take a piece of clean white cloth (for many years I used my stash of cloth diapers up this way) and cut it to be able to drape over the whole turkey. Then I rinse it thoroughly to make sure there is no detergent left (5 times). I melt some butter in a little water and moisten the cloth with this. Then I drape the turkey before putting it in the oven. The oven is preheated hot and then turned down for baking. The turkey sits on a rack with the cloth over it the entire baking time. My cookbook says 20 minutes to the pound for large turkeys. I continually baste the cloth. First with butter and then with pan drippings. The turkey gets perfectly golden brown under the cloth and stays moist this way.

Nici Cake

Mix:
2/3 c. ground walnuts
½ c. sugar
1½ c. whole wheat flour
1 t. baking soda
1 c. blueberries
Add:
1 c. freshly squeezed orange juice
½ c. oil
1 egg
Put 2/3 of dough in greased pan. Add 1/4 c. carob to the rest and make stripes. Bake ca. ½ t. at 350 F or 200 C. Draw a Nici animal on top.

Sammie Dog's Quick Hot Dog Dish

Boil ½ lb. noodles
When drained, add 1 T. olive oil and 3 t. curry
Sauté:
2 celery stalks, chopped finely
3 spring onions, diced
3 cloves of garlic, grated finely
2 bell peppers, diced
Add:
1 c. frozen peas
2½ beef hotdogs, sliced thinly
Add:
curry noodles and serve

Big El's Turkey Pie

Pie crust:
½ c. oil
1 egg
1 t. salt
1 t. pabrika
1½ c. whole wheat flour
Roll between two pieces of wax paper. Put in pie form. Bake at 350 F or 200 C for 10-15 min.
Filling:
Boil 2/3 c. basmati rice in 1 1/3 c. water, ½ t. salt and 1½ t. curry for 15 min.
Fry: ½ lb. turkey breast diced and breaded by dipping in olive oil and then breadcrumbs.
                                                  Sauté:
                                                  1 onion
                                                  2 cloves garlic, finely grated
                                                  1/4 lb. mushrooms
                                                  3/4 c. frozen peas

Mix rice, turkey and vegetables. Put in prebaked pie crust. Sprinkle with grated mozarella and heat in oven for 5 min or until cheese is melted.

Dear Big El,
Just wanted to tell you about a delicious variation of this dish I made. I made your pie crust but substituted 1 t. turmeric and 1 t. chili for the pabrika. Instead of rice, I used fresh noodles. For vegetables, I used 1 onion, 3 cloves of garlic, 1 diced pepper fruit, 1 c. canned corn and 1 stalk celery diced. I seasoned them with pabrika. the turkey was the same.

Snowman's Big Cookie

Mix:
2 eggs
1/2 c. sugar
1 c. coconut
1 c. whole wheat flour
2 pineapple rings cut in small pieces

Shape as a snowman. Make face and buttons with jumbo raisins and regular raisins.
Bake 350F or 200 C for 15-20 min.

Christmas Piglet's Banana Xmas Cake

Mix:
2 small bananas or 1 large, mashed
½ c. oil
2 eggs
1 c. buttermilk
Add:
½ c. sugar
1½ t. cinamon
1 t. vanilla
2/3 c. finely ground almonds
1½ c. whole wheat flour
1 t. baking soda
½ c. chocolate chips
                                                3 canned pineapple rings, diced into small pieces

Bake in greased pan for 35 min. at 350 F or 200 C. When cool, draw Christmas Piglet with icing.

Kiwi's Carrot Lemon Surprise Muffins

Mix:
1 c. finely grated carrots
1 c. lemon juice
4 T. oil
1 egg
1/3 c. sugar
1½ c. whole wheat flour
1 c. ground hazlenuts
½ c. sesame seeds
1 1/4 c. raisins

Put dough in greased muffin tin. Make eyes and mouth with dried cranberries. Bake for ca. 30 min. at 350F or 200C.

TG Tiger's Spiceynada 2.0

The dough is the same as Skvat Cat's Spiceynada, but the filling is different.
Dough:
Mix:
2 c. lukewarm water
1 t. yeast
1 t. chili
1 t. garlic powder
½ t. oregano
whole wheat flour to make a porridge consistency
let stand one hour
Then add 2 T. olive oil and 3 t. salt and spelt flour to make a dough
Filling:
Sauté in olive oil:
1 onion, diced
3 cloves garlic grated finely
2 carrots, diced
2 stalks celery, diced
Add: 1 green pepper, diced
sauté a little
Add:
1½ t. paprika
1 heaping t. chili
½ t. timian
Add:
1 c. drained canned corn
Add:
3 well trimmed pork chops (no fat) dipped in olive oil and bread crumbs and fried and then diced.
Add: 1/4 lb. chinese egg noodles boiled and drained.
Mix well

Knead dough and roll pepper shapes and put in filling and wrap. Poke holes with a fork and brush with olive oil and bake for 30 min. at 350F or 200C.

Skvat Cat's Black Cat Casserole

Boil 2 c. water with 1 t. salt and 1 ½ t. chili
Add 1 1/3 c. basmati rice and simmer for 15-20 min.
Sauté in olive oil:
3 stalks of celery, chopped
6 cloves of garlic finely grated
Add:
sliced mushrooms
1 can corn, drained
Fry in olive oil:
2 veal cutlets dipped in egg and bread crumbs
cut the meat into small pieces and add to vegetables. Add cooked rice and mix. Sprinkle with paprika and serve.

1 t. almond extract
1 T. cinamon

Communication Monkey's Munchy Cake

Mix.
2 bananas, mashed
½ c. buttermilk
½ c. oil
1 egg plus 1 egg white
Add:
½ c. sugar
3/4 c. ground walnuts
½ c. coconut

                                                       1 1/4 c. whole wheat flour
                                                       Bake in greased pan for 30 min at 350 F or 200 C

Tjua's Mexican Turkey Dinner

Boil:
2 c. water
1 t. salt
1 t. paprika
1 t. chili
Add: 2/3 c. brown parboiled rice and cook 25-30 min
Cut up 1 lb. turkey breast into squares and dip in olive oil, then breadcrumbs and fry in olive oil until crispy and cooked.
Sauté:
2 onions, chopped
                                                       2 stalks celery chopped
                                                      When they are almost done, add 1 large carrot, grated
                                                       1 c. canned corn and sauté a little. Then add turkey and cooked rice.
                                                      Top with roasted almonds and serve.

Tjua says: Great turkey dish. If you like very spicey food, add an extra ½ t. chili! ****

Bitzer the Cookie

Mash
1 c. mixed frozen berries that have thawed
Add
grated orange rind (use organic orange and grate the peel of 1½ oranges)
1 egg
½ c. sugar
½ c. oil
½ c. ground walnuts

Spider's Halloween Sticky Dish

Boil 200 g. whole grain penne
Make curry sauce:
Heat 2 T oil, add 4 t. curry and then 3 T. flour. Take off heat and add slowly: about ½ liter chicken bouillion (msg free)
Mix in separate bowl for meatloaf:
1 egg
1 t. salt
1 heaping t. pabrika
pepper
2 cloves garlic, grated
                                                            1 little onion, grated
                                                            360 g. low fat ground beef
                                                            1 c. canned corn, drained

Put the cooked penne and sauce in a pot. Save some sauce for the top of the meatloaf. Shape meatloaf like spider. Give him hazlenut eyes. Put sauce on top. Bake 35 minutes at 350 F or 200 C.

Mix:
½ c. ground walnuts
1½ c. whole wheat flour
½ c. sugar
1 t. baking soda
Add:
1 cup pineapple juice (unsweetened)
3 pineapple rings, diced
½ c. oil
1 egg

Bake in greased pan 30 min at 350 F or 200 C. Cool a little and draw Psyduck with icing. (confectioners sugar and hot water)

Pokeball Muffins

Mix:
1 c. strawberries, mashed
½ c. buttermilk
4 T. oil
1 egg
Add:
1/4 c. sugar
½ c. ground almonds

Put in greased muffin tin. Sprinkle sesame seeds on ½ of each muffin. Place jumbo raisin in the center.
Bake 25 min. at 350 F or 200 C.

Aqua the Fish's Fishy Dishy

Boil:
½ lb. whole grain noodles in salted water
Drain and put back in cooking pan. Add 1 T. olive oil and 4 t. curry
Fry:
5 fish filets breaded with lemon and parsley (fresh or frozen). Cut into bite size pieces
Sauté in olive oil:
2 large carrots, sliced as half circles
Add l large leek, washed and diced and 4 cloves of garlic, grated
Add 1 bell pepper, diced
Add 1½ c. frozen peas
Add fish and curried noodles. Mix well and serve

Uggie's Magic Wok Dish

1 onion, diced
3 cloves of garlic finely grated
2 stalks of celery, diced
3 bell peppers (red, yellow, green), diced
5 leaves of chinese cabbage diced
sliced fresh mushrooms
one package fresh bean sprouts
one pound fresh chicken breast, diced
1 can pineapple in own juice, drain and save juice and cut pineapple rings in pieces
                                                       10 large tiger shrimp
                                                       1/3 pound roasted cashews
                                                       ½ lb. dry chinese noodles (egg noodles, rice noodles, udon or soba)
Boil noodles
Heat 4 T. oil in wok.
Fry diced chicken
Add onions and garlic and 1 t. ginger and sauté
Add celery and fry a little
Add peppers and fry a little
Add chinese cabbage and fry shortly
Add bean sprouts and fry shortly
Add mushrooms and fry shortly
Add shrimp and fry shortly
Add cashews and pineapple
Add 10 T. soy sauce
Add 4 T. pineapple juice
Add noodles
Mix well and enjoy. This is a very large dish for 6 people.

Froggy's World Famous Chili

Chili Sauce:
Sauté in olive oil:
2 onions, diced
3 cloves of garlic, finely grated
1 pound of ground beef
Add:
2 large jars of tomato puree
some water
2 t. salt
1 t. oregano
                                                       fresh basil
                                                       3 carrots, grated
                                                       3 t. chili
                                                       1 t. paprika
                                                       Cook until thick at least 40 min.
Boil rice, chop fresh peppers and lettuce, heat tortillas or tacos and serve.

First Class Chicken Spice Burger

Mix:
1 t. salt
1 t. garlic powder
1 ½ turmeric
1 t. curry
1½ t. pabrika
1 t. chili
Add
1 egg and mix again
Add
450 g. ground chicken
Fry in olive oil- Fat Cat's tip: put oil on your spoon to shape the burgers. These can be thick or thin. I make them thin so they fry fast.

Skvat Cat's Spiceynada

Dough
Mix:
2 c. lukewarm water
1 t. yeast
1 t. chili
1 t. garlic powder
½ t. oregano
whole wheat flour to make a porridge consistency
let stand one hour
Then add 2 T. olive oil and 2 t. salt and spelt flour to make a dough

Filling
Cut up 350 g. lamb and marinate  30 minutes or longer in:
olive oil
grated fresh garlic
1½ t. curry
1 t. paprika
1 t. oregano
Cook 2/3 c. rice with wild rice in
1 c. water
1 t. salt
2 t. chili
1 t. paprika
Dice and sauté in olive oil
1 red pepper
1 yellow pepper
then add:
1 bowl fresh or frozen peas
1 bunch of fresh chives cut small
Fry marinated lamb in a separate frying pan in olive oil. Drain fat, and move meat to vegetables. Add cooked rice.
Knead dough and cut in pieces and roll in desired shape.(here: chili shaped). Add filling and fold and pinch closed. Put on greased baking sheet. Bake 30 min. 200 C or 350 F.

Sheep Cookie

Mix:
1 c. blackberries mashed
½ c. oil
1 egg
½ c. sugar
Add
3/4 c. coconut flakes
1 c. whole wheat flour
1 t. vanilla sugar
1 t. baking powder
Drop on greased cookie sheet with spoon.
Bake about 18 min. at 200 C or 350 F.

Disco Fish Muffins

Mix:
1 egg
1 c. freshly squeezed orange juice
4 T. oil
Add:
1/4 c. sugar
1/4 c. sesame seeds
½ c. ground hazlenuts
1½ c. whole wheat flour
Mix well and fold in 1 c. blueberries
Make fish face with one big chocolate chip for mouth and raisin eyes. Sprinkle with poppy seeds.
Bake in greased muffin tin for about 20 min. at 350 F or 200 C.

Sunday Pig Pancakes


Mix well:
2 eggs
1 c. buttermilk
1 T. oil
a little salt
Add:
½ c. uncooked oatmeal flakes
½ c. whole wheat flour
1 t. baking soda

Adjust thickness with more buttermilk as necessary. Shape as pigs and fry.

Green Fish's Raspberry Cupcakes


Mix:
1½ c. whole wheat flour
½ c. sugar
1 t. baking soda
½ c. ground walnuts
Add:
1 c. freshly squeezed lemon juice
½ c. oil
1 egg
Mix well and fold in 1 c. raspberries

Put in greased cupcake form and put two jumbo raisins in each one for eyes. Bake at 200 C or 350 F for ca. 25 min.
Draw a fish mouth with icing (confectioners sugar + water)
