Green Fish's Raspberry Cupcakes


Mix:
1½ c. whole wheat flour
½ c. sugar
1 t. baking soda
½ c. ground walnuts
Add:
1 c. freshly squeezed lemon juice
½ c. oil
1 egg
Mix well and fold in 1 c. raspberries

Put in greased cupcake form and put two jumbo raisins in each one for eyes. Bake at 200 C or 350 F for ca. 25 min.
Draw a fish mouth with icing (confectioners sugar + water)

  2. So glad to see a recipe with a cup of lemon juice! Someone just gave me 2 dozen lemons from her lemon tree. I will make these tomorrow with my grandson!
