Mix:
1 egg
1 c milk
2 T oil
Add:
3/4 c cornmeal
1/4 c brown sugar
1 c spelt flour
2½ t baking powder
finely grated rind from one organic orange
1 c dried cranberries
Bake in 9" greased round pan for about 20 min at 425 F or 210 C
