Scooby Doo's Scarey Halloween Muffins

Mix:
2 eggs
1/4 c. oil
1 c. lemon juice
Add:
1/4 c. sugar
1 c. finely grated carrots
½ c. finely ground pistachio nuts
2  c. whole wheat flour
1 t. baking soda
4 pineapple rings from a can,  cut in small chunks
Put in greased muffin tin. Make faces with dried cranberry eyes and walnut mouths. Bake about 30 min. at 350 F or 200 C.

Scooby Doo says: Don't be scared of the work, you will have a perfect muffin in the end. *****
