Mix:
1 egg
2 T oil
1 c cooked and mashed pumpkin
1/3 c milk
1 t almond essence
2 t vanilla sugar
3 t baking powder
1 3/4 c corn meal
1/3 c white chocolate chips
Bake in greased 9" round pan for about 25 min at 225C or 430F

Spider's Ginger Vanilla Halloween Cookies
Mix:
2 eggs
1/3 c oil
½ c finely ground walnuts
2 t vanilla sugar
3 t ginger powder
½ c sugar
½ c whole grain durum flour
1 t baking powder
1/3 c dried cranberries
½ c light chocolate chips
½ c whole grain spelt flour
Spoon onto greased baking sheet. Spider made 8 large cookies which baked for about 15 min at 350F or 180C
When slightly cooled, draw Halloween faces with icing (confectioners sugar plus water).
Spider says: This is one Halloweeny treat of a cookie! *****

Blue Flat Cat's Blueberry Honey Waffles
Mix well:
2 eggs
2 T oil
1 c buttermilk
1 T honey
Add:
pinch of salt
1 t baking soda
3/4 c spelt flour
1 c fresh or frozen and thawed blueberries
Bake in waffle iron. Tip: measure oil before honey and then the honey doesn't stick to your spoon.
The waffles can stick to the waffle iron because of the blueberries! You might want to grease your waffle iron first.

Letter to Fat Cat from Yumkin Strawberry
Hi Fat Cat!
I just made this fantastic cake with cocoa, ground almonds and freshly squeezed orange juice and my favorite, strawberries, cut in half and baked on top of the cake, which was first sprinkled with confectioners sugar, and then sprinkled again with more confectioners sugar when it came out of the oven.
Come by and taste it. But you better hurry!

Piglet's Strawberry, Cranberry Pie
Mix:
1 egg
½ c. oil
½ c. raw sugar
4 T. coconut flour
Add enough whole grain spelt flour to make a dough. Divide in two and roll the largest part between two pieces floured baking paper. Line your pie dish with the dough by taking off the one piece of baking paper and then flipping the dough into the pie dish.
Sprinkle bottom with flour. Add a little over a pound of strawberries. (500 g) Add dried cranberries. Sprinkle with a little sugar and a little flour.
Roll out top crust between two pieces baking paper. Cut in strips and lattice the top.
Bake for about 35 minutes at 350 F or 190 C

Zummi's Half Cup Cake
Mix:

3/4 c. blended strawberries

Mix:

finely grated rind from one organic orange
1 c dried cranberries
Bake in 9" greased round pan for about 20 min at 425 F or 210 C

Catball's Spicy Rice Balls
Cook rice:
bring to a boil:
1 c. water
½ t salt
2 heaping t pabrika
½ t curry
½ t chili
a sprinkle of oregano
Add
2/3 c basmati rice and simmer approximately 15 min.
Cut 7-8 oz fresh turkey breast into small pieces
Mix 1½ T olive oil, ½ t salt, 1 t curcumin, 1/4 t curry, ½ t chili
Add turkey pieces, mix well and fry in olive oil and then chop into even smaller pieces
Sauté 2 finely diced spring onions with 3 cloves of garlic, finely grated
In a mixing bowl combine:
2 eggs
1 T olive oil
1 t salt
3/4 c finely ground cashew nuts
3/4 c finely grated carrots (you can use a blender)
1 c drained canned corn
Add spring onions and garlic
Add turkey
Add cooked spicy rice
Mix well and shape as round balls.
Bake at 210 C or 410 F for about 25 min.

Letter to Fat Cat from Jazzy Pink Pig about Nutty Cookies
Dear Fat Cat,
I hope you try these cookies. Here is how I made them: 2 eggs, ½ c. oil, ½ c raw sugar, 1 t. baking powder and then mostly ground nuts with just a sprinkle of whole wheat Italian flour. I used both walnuts and hazelnuts. Then I added orange dark chocolate chips (which I made from a bar) and blackberries (mine were frozen and thawed but you can use fresh). Bake large cookies about 15 minutes and they are very crispy and delicious.
