Mix:
14oz. chopped lean beef
1 egg
1 t. salt
½ t. ginger
1 t. chili powder
1½ t. turmeric
Boil 1½ quarts of water and add chicken bouillon
Sauté lightly:
1 red onion, finely diced
2 cloves garlic, finely grated
1 carrots, cut in quarter circle slices
1 c. sugar snap peas, cut in slices
Add to chicken broth
Then add:
1 orange pepper fruit, diced
2 leaves chinese cabbage, diced
Form meat mixture into tiny meatballs and drop in soup. (use food gloves if you want) Skim off fat from meat.
Add 9 oz. fresh egg noodles cut into short pieces
Boil all together for about 5 minutes and sprinkle with shrimp and serve.

Grandpa Piggy's Red Hot Dish
Boil 5 ½ ounces chinese noodles and drain.
Spice with:
1 T. olive oil
1 t. chili
1 t. paprika
Mix:
14 ounces low fat ground chicken
1 egg
1½ t. turmeric
1½ t. chili
Fry in olive oil and chop meat while frying so it is crumbly.
Sauté:
1 red onion, diced
3 cloves garlic, finely grated
1 red pepper, diced
1 c. canned corn
Add fried chicken and noodles.
Sprinkle with 1 c. almonds, sliced and toasted

Nosey Leopard's Pumpkiny Triangle Cookies
Mix.
1 c. cooked and mashed pumpkin or hokaido squash
½ c. oil
1 egg
1 t. almond essence
½ t. ginger powder
½ c. poppy seeds
½ c. raw sugar
1 c. finely ground walnuts
1 t. baking powder
2 1/4 c. spelt flour
1 c. dried cranberries
Shape the cookies as triangles. Bake on greased baking sheet at 350 F or 180 C for about 20 min or less depending on the size and thickness of the cookies. We made 8 large thick cookies.

Nici Yellow Leopard's Yummy Muffins
Mix:
1 egg
4 T. oil
1 c. unsweetened pineapple juice
½ c. finely ground walnuts
1/4 c. raw sugar
1 c. raisins
1 2/3 c. spelt flour
1 t. baking soda
Put in greased muffin tin. Place three pieces pineapple ring on each muffin and sprinkle with dried coconut. Bake about 25 min at 370 F or 180 C.

Rocco's BBQ Chicken & Noodle Dish
Make Catball's BBQ sauce:
Mix:
3 T olive oil
2 T orange juice
1 T tomato paste
1½ t. balsamico vinegar
1 t. garlic powder
½ t. chili powder
3/4 t. thyme
2½ t. pabrika
½ t. powdered cloves
½ t. sugar
Marinate ½ lb chicken filet in BBQ sauce for at least one hour. Bake at 350 F or 180 C for 15-20min.

3½ ounces fresh sliced mushrooms
2 leaves chinese cabbage, finely chopped

Mix vegetables, chicken (diced) and noodles. Sprinkle with 3/4 c. shelled roasted pistachio nuts and serve.
Rocco says: Mild, but very tasty dish that serves 4-5. *****

Shape into two loaves and baste with olive oil and bake at 375 F or 200 C for about 20 minutes. longer if you only make one loaf.

3/4 c. finely ground hazelnuts
½ c. sunflower seeds without shells
½ c chocolate chips
3/4 c. unsweetened cocoa powder
1 cup spelt flour
1 t. baking soda
Put in greased muffin tin. Put a walnut on top of each muffin and bake for about 25 min. at 350 F or 180 C.

If you need some jam this holiday, I can recommend this really yummy strawberry, lime jam with orange peel that I just made. I used frozen strawberries, lime juice, grated organic orange peel and sugar and cooked until it jelled. It is fantastically delicious and different than any jam you have tried.

Little Pig's Xmas Crunchy Cookie
Mix:
1 egg
½ c. oil
½ c. raw sugar
1 t. vanilla essence
1 T. unsweetened cocoa
grated organic lime peel
4 t. ginger powder
½ c. finely ground hazelnuts
ca. 1 1/4 c. spelt flour
1 t. baking powder
Roll and cut with a cookie cutter. Bake about 10 min (depending on thickness and size) at 350 F or 180 C
Icing:
Mix 4-5 frozen strawberries, thawed and blended with
confectioners sugar and ice cookies that have cooled for 10 min.
Little Pig says: Have a Happy Christmas and try this cookie! It is very tasty*****
Big Pig's variation:
Use lemon peel, instead of lime peel.
Use ground walnuts, instead of hazelnuts.
Use carob, instead of cocoa.
Omit vanilla essence.
Big Pigs says: Try these any time of the year! They are very tasty too!!! *****

Pie Crust:

1 3/4 c. spelt flour
Divide in two uneven balls. Roll out biggest ball between two pieces floured baking paper.
Put in pie dish.
Add filling:
5 c. tart apples, peeled and diced
1 c. raspberries fresh or frozen
1 c. dried cranberries
3 T. raw sugar
2 T. spelt flour
Roll out top and cover. Cut slits with a knife
bake at 350 F or 180 C for about 40 minutes.

Letter to Fat Cat from Pelican
Dear Fat Cat, Here's a photo of my Pelican Muffins-they are delicious! I used bananas that I mashed in a little blender and that worked great and ground walnuts and poppy seeds. The faces are strawberries as beaks and hazelnut eyes. Best regards, Pelican
