If you need some jam this holiday, I can recommend this really yummy strawberry, lime jam with orange peel that I just made. I used frozen strawberries, lime juice, grated organic orange peel and sugar and cooked until it jelled. It is fantastically delicious and different than any jam you have tried.

Little Pig's Xmas Crunchy Cookie
Mix:
1 egg
½ c. oil
½ c. raw sugar
1 t. vanilla essence
1 T. unsweetened cocoa
grated organic lime peel
4 t. ginger powder
½ c. finely ground hazelnuts
ca. 1 1/4 c. spelt flour
1 t. baking powder
Roll and cut with a cookie cutter. Bake about 10 min (depending on thickness and size) at 350 F or 180 C
Icing:
Mix 4-5 frozen strawberries, thawed and blended with
confectioners sugar and ice cookies that have cooled for 10 min.
Little Pig says: Have a Happy Christmas and try this cookie! It is very tasty*****
Big Pig's variation:
Use lemon peel, instead of lime peel.
Use ground walnuts, instead of hazelnuts.
Use carob, instead of cocoa.
Omit vanilla essence.

Gobbles' Thanksgiving Apple Surprise Pie
Pie Crust:
Mix
1 egg
½ c. oil
½ c. raw sugar
1½ t. baking powder
1 3/4 c. spelt flour
Divide in two uneven balls. Roll out biggest ball between two pieces floured baking paper.
Put in pie dish.
Add filling:
5 c. tart apples, peeled and diced
1 c. raspberries fresh or frozen
1 c. dried cranberries
3 T. raw sugar
2 T. spelt flour
Roll out top and cover. Cut slits with a knife
bake at 350 F or 180 C for about 40 minutes.
Gobbles says: This pie is so good you will gobble it up*****

Letter to Fat Cat from Pelican
Dear Fat Cat, Here's a photo of my Pelican Muffins-they are delicious! I used bananas that I mashed in a little blender and that worked great and ground walnuts and poppy seeds. The faces are strawberries as beaks and hazelnut eyes. Best regards, Pelican

Hawaian Tortillas
Boil 3/4 c. water
½ t. salt
1 t. turmeric
1 t. curry
Add ½ c. basmati rice and simmer 15 min.
Fry: 10 chicken nuggets and cut in small pieces
Sauté:
1 large carrot, diced
3 garlic, finely grated
Add:
1 c. frozen peas
6 pineapple rings, diced
½ c. sesame seeds
Add rice and chicken nuggets
Heat tortillas, add filling and fold and eat and enjoy!

Add: water to cover half way up
5 mint leaves chopped
2 vanilla beans cut open and scrape out seeds
Simmer with lid on, until the apples are soft and can be mashed.
Add ½ c. sugar and cook a little more.
Add more sugar to taste if wanted depending on the tartness of the apples.
Homer says: Goes great with a barbecue! *****

1 c. water
1 T. yeast
enough spelt flour to make a porridge consistency.
Cover and let rise at least one hour.
Add:
4 T. olive oil
1 t. salt
2 T. cinnamon
2 eggs
½ c. sugar plus 2 T. sugar
1 c. frozen blackberries, thawed
1 c. pear, peeled and diced and mixed with 1 t. ginger and 1 t. sugar
Add enough spelt flour to make a dough. Shape as Frederick the Fox or an animal of your choice.
Bake at 350 F or 180 C for about 30 - 35 min depending on the thickness of your animal.

3/4 c. almond flour (finely ground almonds)
1 c. spelt flour
1 t. baking soda
3/4 c. raisins
1 c. finely diced fresh pear, mixed with 1 t. ginger and 1 t. cinamon and 1 t. sugar
Make walnut faces on top
Bake in greased muffin tin at 350 F or 180 C for about 25 min.

Mallard Duck's Pistachio, Lemon, Chocolate Cake
Mix:
2 eggs
1 c. lemon juice
½ c. oil
2/3 c. finely ground pistachio nuts
½ c. sugar
1/4 c. unsweetened cocoa
grated peel from 1 lemon
2 c. spelt flour
1 t. baking soda
Bake about 30 min in greased pan at 350 F or 180 C.
Draw Mallard Duck or another animal on top with white icing.

Catball & Yes Bear's Sweet & Spicey Round Empanadas
2 c pineapple juice
1 t yeast
enough spelt flour to make a porridge consistency.
Cover and let stand.
Bake turkey:
400 g. turkey breast cut in slices marinated with
3 T olive oil, 2 t curry, 2 t pabrika
Bake at 350 F or 180 C for 20 min or until done.
Cut in cubes.
Boil:
1 c water
Add:
2/3 c basmati rice
1 t salt
1½ t chili powder
1½ t pabrika
Simmer 12 min or until done.
Dice and sauté:
1 leek
5 garlic cloves
2 stalks celery
150 g. bean sprouts
1 orange pepper
2 t curcumin
1 t chili powder
Add cubed turkey and cooked spicey rice to vegetables and mix well.
Finish dough by adding:
1 t salt
4 T oil
enough flour to make a good consistency.
Knead and form into balls. roll out each ball to a flat circle and place filling in the middle. Pull all sides up to center and pinch to form a ball. Baste with beaten egg and bake for about 30 min at 350 F or 180 C.
